摘要
果渣是指植物的果实在经过压榨、提取汁液或油份之后,所余下的固态部份,包括果皮、果肉、果籽、果梗等。果渣作为一种新型廉价资源,富含多种营养成分,具有广阔的发展利用空间。文中就国内外果渣利用的现状及开发动向进行综述,为今后果渣的处理提供方向和思路,实现资源节约化、可持续化发展。
The fruit pomace is the solid remains of grapes, olives, or other fruit after pressing for juice or oil. It contains the skins, pulp, seeds, and stems of the fruit. The pomace, that is rich in nutrients, has a broad perspective as a new type of cheap resources. This paper summarized the utilization and the development of pomace. It can provide some technical guidance for the usage of fruit pomace to realize the resource conservation and sustainable development.
