摘要
采用响应面法优化酶解提取带鱼内脏鱼油,在筛选出最优酶的基础上,进行单因素和响应面优化分析,结果发现胰蛋白酶酶解带鱼内脏提取鱼油的效果最好,用胰蛋白酶酶解得到鱼油的最佳工艺参数条件为:加酶量2.08%,酶解温度38.34℃,p H值8.21,酶解时间180 min,预测鱼油提取率为79.0%。为了方便实际操作,选取鱼油提取率的最佳工艺参数条件为:加酶量2.0%,酶解温度38℃、p H值8.20,酶解时间180 min,得到的实际鱼油提取率78.66%,这与预测值基本相吻合。因此,响应面法优化得到的最佳工艺参数可靠性较高。
To optimize the extraction technique for oil from hairtail viscera by enzyme hydrolysis, based on the optimal enzyme, single factor and response surface method were used to optimize the enzymolysis conditions in the extraction process. The result showed that trypsin enzyme has the best effect on the extraction of hairtail viscera oil, and the optimal enzymolysis conditions was the amount of enzyme 2.08 % , enzymolysis temperature 38.34 ℃, the pH value 8.21, and the enzymolysis time 180 min. In actual operation, the optimal process conditions of hairtail viscera oil instead: the amount of enzyme 2.0 %, enzymolysis temperature 38 ℃, the pH value 8.20, the enzymolysis time 180 min, the oil extraction rate is 78.66 %, was consistent with the theoretical value. This suggested that the optimal enzymolysis conditions has high reliability.
