摘要
调研了市售木榨菜籽油的苯并(a)芘污染情况,并从原料、加工、静置储存等环节对木榨菜籽油中苯并(a)芘的形成及迁移规律进行分析。结果表明:12种市售木榨菜籽油存在1个样品苯并(a)芘超标(GB 2716—2005)情况;主要苯并(a)芘来源为加工环境烟气的污染、过度炒籽及加工接触物及助剂的污染;主要控制措施为原料运输、储存过程中严格管控,适当炒籽,严格筛选加工接触物及助剂,及时充分排烟。
Contents of benzo(a)pyrene in wood-pressed rapeseed oils from the market were studied.Sources and migration of benzo(a)pyrene in wood-pressed rapeseed oil from material, process and static storage were analyzed. The results showed that the content of benzo(a)pyrene of one sample of commercial twelve kinds of wood-pressed rapeseed oils exceeded(GB 2716—2005). The sources of benzo(a)pyrene were analyzed as follows:pollution of smoke in processing environment, excessive roasting, pollutions of processing contact and additives. The control measures were strict control of rapeseed material transportation and storge process, moderate roasting, rigorous selection of processing contact and additives, keeping ventilation and strict partition to avoid smoke pollution.
