摘要
以恰玛古和蟠桃为主要原料,白砂糖、Vc、柠檬酸等为辅料,并加入适量的稳定剂研制而成的复合型果蔬汁饮料。通过正交试验得出,恰玛古蟠桃复合果蔬汁饮料的最优配方为恰玛古浆30%,蟠桃浆15%,白砂糖8%,柠檬酸0.08%,CMC-Na0.04%,黄原胶0.04%,果胶0.06%,所得产品均匀一致,口感细腻,酸甜可口,风味独特。
Using Qiamagu and flat peach as the main raw material,sugar,Vc and citric acid as additives,and stabilizer a complex fruit and vegetable juice drink was developed. Through orthogonal test,the optimal formula of Qiamagu and flat peach complex juice drink is Qiamagu 30%,flat peach pulp 15%,sugar 8%,citric acid 0.6%,CMC Na-0.04%,xanthan gum 0.04%,and pectin 0.06%. The product has uniformity texture,delicate taste,sweet and delicious,unique flavor.
