摘要
本文简要论述了引起食品腐败的因素及食品保藏方法、分类。食品能保持原有品质和风味,必须对引起食品腐败的因素有所了解,然后针对败坏的因素给予适当处理,防止食品败坏现象的发生,即可达到保藏食品的目的。食品保藏方法分为三大类:物理保藏法,化学保藏法,生化保藏法。
This paper briefly discusses the factors that cause food corruption and the methods and classification of food preservation. Food can keep original quality and flavor, causes of food corruption, we must be based on the factors of corrupt give appropriate treatment, prevent the occurrence of food corruption phenomenon, can achieve the purpose of preserving food. Food preservation methods are divided into three broad categories: physical preservation method, chemical preservation method, biochemical method of preservation.
