摘要 对4个代表性地理标志产品老君眉茶的感官品质、主要理化成分以及芳香物质进行了分析。结果表明,老君眉茶具有外形紧实、色泽绿润、内质汤色绿明、香气清香持久、滋味浓醇爽口、叶底细匀绿亮的品质特征。茶多酚含量26.47%~31.93%,氨基酸含量3.17%~3.51%,可溶性糖含量3.13%~3.59%,叶绿素含量0.96~1.05 mg/g。GC/MS分析鉴定出老君眉茶含52种芳香成分,其香气物质主要是清香和花果香的醇类、萜烯类和酯类,主要的香气物质有4-甲基-5-己烯-2-醇、反氧化芳樟醇、顺氧化芳樟醇、3,7,11,15-四甲基-2-氢-1-醇、6,9-十八烷二烯酸甲酯、棕榈酸乙酯(ethyl palmitate)、邻苯二甲酸丁酯(butyl benzene o-dicarboxylate)、库毕醇、(1S-顺)-1,2,3,4-四氢-1,6-二甲基-4-(1-甲基乙基)-萘、(1S-顺)-1,2,3,5,6,8a-六氢-4,7-二甲基-1-(1-甲基乙基)-萘、丁基羟基甲苯、2,5-二(1,1-二甲基丙基)-2,5-环己二烯-1,4-酮等。优越的环境条件和良好的加工技术是形成老君眉茶品质的基础。 The biochemical constituents and quality parameters of four representative Laojunmei famous teas were analyzed. The result showed that the tea was characterized by tight appearance, green color, fresh flavor and mellow taste. It contained 26.47%-31.93% of polyphenol,3.17%-3.51% of amino acid,3.13%-3.59% of soluble sugar and 0.96-1.05 mg/g of chlorophyll. The aroma constituents in Laojunmmei famous tea were investigated by GC/MS. Fifty two aroma compounds were identified,in-cluding fresh and floral-fruity alcohols,terpenes and esters. The main aroma constituents were 4-methyl-5-hexen-2-ol,(E)-linalool oxide,(Z)-linalool oxide,3,7,11,15-tetramethyl-2-hexadecen-1-ol, methyl linoleate, ethyl palmitate,butyl benzene o-dicarboxylate, cubenol,(1S-cis)-1,2,3,4-tetrahydro-1,6-dimethyl-4-(1-methylethyl)-naphthalene,(1S-cis)-1,2,3,5,6,8a-hexahydro-4,7-dimethyl-1-(1-methylethyl)-naphthalene,butylated hydroxytoluene,2,5-bis(1,1-dimethylpropyl)-2,5-cyclohexa-diene-1,4-dione. It suggested that the quality of Laojunmei famous tea could benefit from good environmental conditions and processing technology.
