壳聚糖在热带水果贮藏保鲜中的应用研究进展

壳聚糖是广泛存在于自然界中的唯一碱性多糖,具有广谱抗菌性、良好成膜性、抗氧化活性和安全可食性等优点,可作为天然高效的保鲜材料,应用于果蔬保鲜领域。通过介绍壳聚糖的保鲜特性,综述了壳聚糖在5种热带水果贮藏保鲜中的应用研究进展,并对其应用前景和研究发展方向进行了展望,旨在为壳聚糖在热带水果贮藏保鲜中的研究和应用提供参考。

Chitosan is the unique alkaline polysaccharide and exists extensively in the nature. It can be used as a natural and efficient preservative material in the freshness preservation of fruits and vegetables because of its broad-spectrum antibacterial, good film-forming, antioxidant activity, safety and edibility, etc.. In this paper, the preservation characteristics of chitosan are introduced, the progress on the application of chitosan in the storage and preservation of five tropical fruits is reviewed, and the application prospect and research direction of chitosan are given in the end. The purpose of this paper is to provide a reference for the research and application of chitosan on the storage and preservation of tropical fruits.
