摘要
以黑米为主要原料,采用乙醇浸提法提取黑米花色苷,并采用单因素和响应面法优化其工艺参数。结果表明,黑米花色苷提取最佳工艺参数为乙醇体积分数77.67%、提取时间81 min、料液比1:20,在此条件下,黑米花色苷得率为5.14%。
The black rice anthocyanin was extracted by ethanol extraction method, and the process parameters were optimized by single factor and response surface method. The results showed that the optimum extraction conditions were as follows: the concentration of ethanol was 77.67%, the extraction time was 81 min, the ratio of material to liquid was 1:20. Under these conditions, the yield of anthocyanin was 5.14%.
