高校“焙烤食品工艺实训”公选课的教学探索与实践

摘要 公共选修课(以下简称"公选课")作为高校课程体系的一个重要组成部分,在提升学生综合素质方面起着非常重要的作用。如何实施素质教育、提高教学质量,是一个值得探讨的课题。在教学实践的基础上,系统分析了传统公选课存在的弊端,提出了在实训室建设、教学内容、授课方式、考核办法等方面进行创新,从而很好地激发学生的学习兴趣,促进学生综合能力的提高。 Teaching of public optional courses in colleges and universities is an essentially important part of the whole teaching and improving students' comprehensive quality. How to carry out quality-oriented education and enhance the quality of teaching in public optional courses of baking food processing technology (BFPT) are needed to be studied. On the basis of teaching practice, systems analyzes the malpractice existed in the traditional teaching methods of BFPT, provides the course of BFPT should be innovated in teaching environment, teaching content, teaching methods, teaching evaluation model, etc. So good to stimulate student interest in learning, train students practice innovation capability, promote the improvement of the overall quality of student.
