SPE-UPLC-MS/MS法测定酱卤鸡腿老汤中10种杂环胺 被引量:8

Determination of 10 Heterocyclic Aromatic Amines in Halogen Soup of Drumstick Products by Ultra-high Performance Liquid Chromatography Tandem Mass Spectrometry

摘要 采用固相萃取(SPE)-超高效液相色谱-串联质谱法(UPLC-MS/MS)对酱卤鸡腿老汤中的杂环胺进行提取和检测。酱卤鸡腿的老汤样品经过超声提取,离心分离,固相萃取小柱富集,甲醇-氨水洗脱,最后经UPLC-MS/MS法检测分析。结果表明,10种杂环胺标准品在2~200μg/L线性范围良好,相关系数r>0.990,在添加水平10,20和50μg/L时回收率为55.6%~100.2%,相对标准偏差为1.4%~6.4%。SPE-UPLC-MS/MS法处理样品时间短,分析速度快,定量准确,能够应用于老汤中杂环胺的检测。 A new method was established to determine 10 kinds of heterocyclic amines (HAs) in halogen soup. The samples were extracted with ethyl acetate and these were centrifuged. The extraction was cleaned up with solid phase extraction, eluted with methanol-ammonia, and determined by ultra-high performance liquid chromatography tandem mass spectrometry (UPLC-MS/MS). The results were showed that 10 HAs had a good linear with 2-200 μg/L (r〉0.990). The recovery of the HAs ranged from 55.6% to 100.2% with the relative standard deviation (RSD) between 1.4% and 6.4% in the tested samples at 10, 20 and 50 μg/L levels. This simple, rapid, accurate and sensitive method could be used to determine the various HAs in halogen soup.
