摘要 我国有丰富的辣椒资源,是世界上辣椒酱生产和消费大国,辣椒酱产品正向多元化发展。辣椒酱作为国内最常用的调味品,味道鲜美,色泽鲜红,富含蛋白质、维生素和辣椒素等物质,具有促进食欲、改善消化、驱寒治病等功效。辣椒酱行业的发展具有较高的经济效益和社会效益,在未来国际市场中有广阔的前景。文章概述了辣椒酱目前的研究开发现状、行业生产销售状况、存在的问题及基本的解决思路,介绍了辣椒酱产品使用的原料、生产工艺、研究现状、市场分布及行业发展趋势。 Our country is rich in chili resource, and it is the world's large producer and consumer ot chili sauce. China's chili sauce products are developing towards diversification. Chili sauce as the most commonly used condiment in China, it is delicious with bright red color, rich in protein, vitamins, capsaicin and other substances. Chili sauce has the functions of promoting appetite, improving digestion, fending off the cold and so on. Chili sauce industry development has high economic benefit and social benefit, it also has a broad prospect in the future international market. Summarize the current research and development status, the industry production and sales situation, the existing problems and the basic solutions of chili sauce. In addition, introduce chili sauce product about the use of raw materials, production technology, research status, market distribution and industry development trend.
