摘要
高产酯酿酒酵母具有同步产酒生香的特点,在保持高出酒率的同时生成较高含量的酯香物质,对高产酯酿酒活性干酵母在固态法小曲酒生产中的应用进行了研究。试验结果表明,在固态法小曲酒原工艺基础上添加0.03%的高产酯酿酒活性干酵母,与对照相比,乙酸乙酯提高61.1%,乙酸异戊酯提高4.87倍,总酯含量提高38.7%,杂醇油下降16.5%,乙乳比由1.38提高至2.17,酯醇比由1.04提高至1.68,清香突出,成品酒质量明显提高。
Alcohol active dry yeast (AADY) with high-yield of acetate esters can produce both alcohol and esters during the fermentation process with high liquor yield and esters yield. In this paper, the application of AADY in the production of Xiaoqu Baijiu was studied. The result showed that the addition of 0.03 % AADY during the fermentation process of Xiaoqu Baijiu could increase ethyl acetate content by 61.1 %, increase isoamyl acetate content by 4,87 %, increase total esters content by 38.7 %, and reduce fusel oil content by 16.5 %. Besides, the ratio of ethyl acetate to ethyl lactate increased from 1.38 to 2.17, and the ratio of total acetate to higher alcohols increased from 1.04 to 1.68.
