不同养殖模式下珍珠龙胆石斑鱼的品质比较 被引量:5

摘要 比较分析了室外水泥池(OC)、池塘(PC)和海水网箱(CC)3种养殖模式下珍珠龙胆石斑鱼的肌肉营养成分、风味物质含量和肌肉物理特性。结果显示:养殖模式的不同并未显著影响珍珠龙胆石斑鱼肌肉的蛋白质营养价值,但对鱼体脂肪的累积和组成、新鲜度K值和肌肉硬度均具有较大影响。OC养殖模式的珍珠龙胆石斑鱼粗脂肪含量显著高于其它两种养殖模式(P<0.05)。CC养殖模式的珍珠龙胆石斑鱼EPA和DHA含量显著高于其它两种养殖模式(P<0.05),脂肪营养更好;肌肉的硬度显著大于PC和OC养殖模式(P<0.05),肌肉更结实,嚼劲更大。PC养殖模式的珍珠龙胆石斑鱼具有显著的高蛋白、低脂肪优势(P<0.05);K值最小(P<0.05),具有更加新鲜且货架期更长的优势。综上所述,认为池塘结合网箱养殖,可能是获得珍珠龙胆石斑鱼最佳肌肉品质的养殖模式。 The differences of muscle in nutritional components,delicious material and physical characteristics of farmed grouper(♀Epinephelus fuscoguttatus ×♂Epinephelus lanceolatus)from outdoor tank culture model(OC),pond culture model(PC)and cage culture model(CC),were tested and analyzed in order to evaluate its nutritive value and flesh quality.The results showed no significant differences in the protein content(P>0.05),but in lipid content and the K value and the hardness of muscles.The crude lipid of fish from OC aquaculture model was significantly higher than that from other models(P<0.05).EPA and DHA and the hardness of muscle of fish from CC aquaculture model was significantly higher than that from other models(P<0.05),the fish muscles of this aquaculture model had better fat nutrition and satisfying hardness.fish from PC aquaculture model had significantly higher protein and lower lipid and lower K value(P<0.05).Above all,the combined aquaculture model of pond-cage might be the better aquaculture model to improve the nutritive value and flesh quality of the farmed grouper.
