摘要
对果胶酶的分类及来源作了简要介绍,着重对近年来果胶酶在食品领域中的应用研究作了较为全面的综述,提出了目前果胶酶应用存在的问题,并展望了未来的研究发展方向。
The classification and source of pectinase were briefly introduced. The comprehensive review about the applied research of pectinase in food industry was focused on in recent years, and the application problems and the future research direction ofpectinase were proposed.
