摘要
竹笋是一种营养丰富同时具有一定保健功效的食用佳品。本文从竹笋资源的价值与利用出发,对竹笋食品开发状况及综合利用进行了阐述。通过对竹笋资源、加工工艺及综合利用情况进行分析,提出了今后竹笋研究的发展方向。
Bamboo shoots and utilization of bamboo shoots were expounded in boo shoots were analysed, are a kind of nutritious and have certain health function of edible. Based on the value shoots resources, food development status and comprehensive utilization from bamboo this paper. The resources, processing technologies and comprehensive utilization of barn- its research direction in the future was put forward.
