泡辣椒中产气微生物的分离及鉴定 被引量:2

摘要 为解决产气微生物引起的泡辣椒涨袋问题,本实验对涨袋泡辣椒产品中的微生物进行了分离鉴定。从涨袋泡辣椒水样品中分离出6株真菌,5株细菌,并对其菌落形态进行了观察;继续通过产气试验筛选出6株产气真菌,2株产气细菌,分别进行26S rDNA、16S rDNA测序。鉴定结果表明产气真菌为Kazachstania turicensis和Saccharomyces cerevisiae,产气细菌为Pseudomonas azotoformans。由此得出此3种微生物是引起泡辣椒涨袋的主要原因,对抑菌剂的开发具有一定的启发和借鉴意义。 In order to solve the problem of hot pepper growing bag caused by gas producing microorganism, the microorganism in the bagged pepper products was isolated and identified. 6 strains of fungi and 5 strains of bacte- ria were isolated from the samples of the hot pepper's water. And the morphological characteristics of the colony were observed. 6 strains of fungi and 2 strains of bacteria were produced through the gas production test. The fungi and bacteria were amplified and sequenced by 26S rDNA and 16S rDNA sequences. Finally, the gas-producing fungi were Kazachstania turicensis and Saccharomyces cerevisiae, and the gas-producing bacteria was Pseudomonas azotoformans. The results showed that the three kinds of microorganisms were the main reason of the hot pepper bag, and has a certain inspiration and reference for the development of bacteriostatic agents.
