摘要
采用高效液相色谱法测定茶叶中的C,EC,EGC,EGCG和ECG 5种儿茶素组分,确定了检测的准确性,并对7种茶叶样本进行定量分析。以5种组分含量为指标,采用聚类分析方法对绿茶、花茶、黄茶、乌龙茶、红茶和黑茶进行合理分类。该分类方法根据发酵程度越高儿茶素含量越低,对茶叶的种类进行判别,并能反映茶叶的品质变化。对茶叶中儿茶素的研究,是对茶叶中活性组分用于聚类分析的一次探讨。
In this article, five catechin ingredients including C, EC, EGC, EGCG, and ECG have been determined through high performance liquid chromatography, the accuracy of detection is also determined,and seven tea samples are analyzed quantitatively. Five kinds of ingredients as an index component, and take reasonable classification of green tea, scented tea, yellow tea, oolong tea, red tea and dark tea through cluster analysis. The classification method base on the higher fermentation degree, the lower catechin of the tea, identified types of tea, and can reflect the quality change of tea. In this paper, the study of the catechin in the tea, it is a discussion on the cluster analysis of the active components in the tea.
