不同挤压参数对鹰嘴豆淀粉颗粒形貌的影响 被引量:7

摘要 对不同参数条件下双螺杆挤压处理鹰嘴豆淀粉的颗粒形貌进行观察,研究鹰嘴豆淀粉颗粒形貌的变化。利用扫描电子显微镜对淀粉颗粒形貌进行观察,分析不同挤压蒸煮温度、原料水分含量、螺杆转速、喂料速度等因素条件下得到的变性鹰嘴豆淀粉颗粒形貌,并与鹰嘴豆原淀粉颗粒形貌进行对比。结果表明,鹰嘴豆原淀粉颗粒表面光滑,主要呈卵圆形;挤压膨化处理后,不同挤压参数条件对鹰嘴豆淀粉颗粒形貌产生不同的影响,鹰嘴豆淀粉颗粒表面粗糙,多数呈现不规则多角形状。说明高温高压挤压膨化处理对鹰嘴豆淀粉颗粒结构改变产生重要影响。 The granule morphology of chickpea starch treated by twin-screw extruder under different parameters is observed, and the morphology of starch granule of chickpea starch is investigated. The starch granule morphology is observed by scanning electron microscopy, particle morphology, degeneration of chickpea starch obtained by different extrusion temperature, mate-rial moisture, screw speed, feed speed and other factors and conditions, and chickpea starch particle morphology are com-pared. The results show that the starch granules of the main surface is smooth, oval, extrusion, extrusion and different pa-rameters have different effects on the particle morphology of starch granules, the surface is rough, the majority shows irregular polygonal shape. It shows that high temperature and high pressure extrusion treatment have important influence on starch grain structure change.
