摘要
冷冻牛肉卷中心温度的高低对牛肉卷的加工性能有重要影响。采用冷冻库对牛肉卷进行冻结试验,探讨冷冻库不同位置对冷冻牛肉卷中心温度的影响。结果表明,冷冻牛肉卷中心温度的高低与接触到的冷气量有关,接触到的冷气量越多,温度越低,反之越高;冷冻库不同检测点冷冻牛肉卷中心温度温差较大,且各个部位上中下温度的变化没有明显的规律性,这与各个部位风速不同导致接触到的冷气量不同有关。如何通过一定的技术手段将冷气均匀分配到冷冻库的各个位置、缩短各个检测点冷冻牛肉卷中心温度的差异是冷冻库设计面临的一个课题。
The central temperature of frozen beef roll has an important influence on the processing performance of beef roll. In the fi'ozen storage an experiment on beef roll had been done and the effect of different positions on the central temperature of frozen beef roll in frozen storage was also studied. The results show that, frozen beef roll center temperature and it been exposed to the Cold air are related, the more exposure to the cold air, the lower the temperature, the higher the contrary; The center temperature of frozen beef roll on different detection points in the frozen storage is great difference, and the change of temperature in each part has not obvious regularity, which is different with various parts of exposure to the cold air is different because wind speed is different. It is a subject that how to evenly distribute the cold air to each position of the frozen storage and to shorten the difference oftbe center temperature of the frozen beef roll by some technical means.
