摘要
目的了解2013年渭南市食品中食源性致病菌污染状况,及时发现食品中的安全隐患,为食品安全监督管理提供科学依据。方法按照《2013年陕西省食品微生物及其致病因子监测工作手册》规定的程序和方法,对渭南市9类222份食品进行7种食源性致病菌监测。结果检出食源性致病菌35株,总检出率15.77%,其中铜绿假单胞菌检出率最高(60.00%),蜡样芽孢杆菌、金黄色葡萄球菌、单增李斯特氏菌、沙门氏菌均有不同程度的检出,致泻大肠埃希氏菌、阪崎肠杆菌均未检出;不同种类食品中桶装饮用水致病菌检出率最高(60.00%);不同包装食品中致病菌检出率散装(23.61%)高于定型包装(12.00%),差异有统计学意义(χ~2=4.94,P<0.05);不同采样场所农贸市场致病菌检出率最高(31.58%),差异有统计学意义(χ~2=17.76,P<0.01)。结论 2013年渭南市食品存在不同程度食源性致病菌污染,相关卫生监管部门应加强监管。
Objective To understand the contaminating characteristics of pathogenic bacteria in food from Weinan in 2013,to discover potential safety hazards of food in time, and provide scientific basis for food safety supervision and management. Methods According to the "Handbook of food microbiology and its pathogenic factors monitoring in Shaanxi Province in 2013",a total of 222 food samples of 9 kinds were detected for 7 kinds of food-borne pathogens. Results 35 strains of food-borne pathogens were detected,the total detection rate was 15. 77%,among which the detection rate of pseudomonas aeruginosa was the highest of 60. 00%,among which Bacillus cereus,Staphylococcus aureus,Listeria monocytogenes and Salmonella were positive in samples to some extent; diarrheogenic Escherichiacoli,Enterobacter sakazakii were negative in samples. Among which the detection rate of bottled drinking water was the highest of 60. 00%. The detection rate of 23. 61% in different packaged foods was higher than that of the packaged food of 12. 00%,which had significant difference( χ~2= 4. 94,P 〈 0. 05). Pathogen detection rate of different sampling sites was the highest of 31. 58% in farmers’market,which had significant difference( χ~2= 17. 76,P 〈 0. 01). Conclusion There are different degrees of pollution of food-borne pathogenic in the foods in Weinan,which suggests relevant health supervision departments to strengthen supervision.
