摘要
目的:通过研究紫光光质对采后番茄果实的番茄红素、可溶性蛋白、可溶性糖等含量的影响,筛选适合采后番茄光照射处理的人工光源。方法:以白果期番茄果实为试材,将清洗干燥后的果实转入紫光(P)和黑暗(D,对照)处理下进行照射,光强设置为40μmo L/(m2·s),光周期为12 h/d,处理时间为21d,然后测定其相关品质生理指标,进行光效应分析。结果:与黑暗处理相比,紫光处理下的40、50、60、70和80 g的番茄果实中的番茄红素分别提高了70.87%、65.89%、62.50%、65%和74.07%;可溶性蛋白含量分别提高了70.87%、31.86%、62.69%、40.89%和29.06%;可溶性糖含量分别提高了45.58%、40.43%、56.16%、46.95%和52.13%;可溶性固形物含量分别提高了57.55%、73.10%、61.52%、59.57%和61.49%;总酚含量提高了33.50%、26.79%、39.97%、34.25%和71.69%;但是,相同处理下的不同单果重间的果实中番茄红素、可溶性蛋白、可溶性糖、可溶性固形物和总酚含量无显著差异。结论:紫光处理提高了采后番茄果实的番茄红素、可溶性蛋白、可溶性糖、可溶性固形物和总酚的含量,但是在不同单果重果实中的含量无显著差异。在采后番茄光处理时,采用紫光作为照射的光源,可以提高其相关品质生理指标,该方案可为采后果蔬品质的光调控提供参考。
Objective: The present study evaluated the effects of purple light( P) on lyphene,the content of soluble protein,sugar,solids and total phenol of postharvest tomatoes in order to select nartificial light for postharvest tomato. Methods: White tomato fruit was used as the test material,and using the single factor randomized block design,tomato fruit after cleaning and drying were exposed to purple( P) lights and using dark light( D) as control. Results: Compared with dark treatment,the contents of lycopene in 40,50,60,70 and 80 g tomato fruit under purple treatment were increased by 70. 87 %,65. 89 %,62. 50 %,65 % and 74. 07 %; soluble protein in above different grades of tomato fruit under purple treatment increased by 70. 87 %,31. 86 %,62. 69%,40. 89 % and 29. 06 %; soluble sugar by 45. 58 %,40. 43 %,56. 16 %,46. 95 % and 52. 13 %; soluble solids by 57. 55 %,73. 10 %,61. 52 %,59. 57 % and 61. 49 %; total phenol by 33. 50 %,26. 79 %,39. 97 %,34. 25 % and 71. 69 %,respectively. However,there was no significant difference in the content of lycopene,soluble protein,soluble sugar,soluble solids and total phenolics between different weight grade fruit.Conclusion: The purple treatment increased the content of lycopene,soluble protein,soluble sugar,soluble solid and the total phenol in tomato fruit. However,there was no significant difference in these content of different weight fruit. In postharvest tomato,purple light can be used as artificial light source for the irradiation which can obviously promote the tomato color change,improve the quality of physiological indexes. The present study can provide theoretical guidance and technical support for light regulating the quality of postharvest fruit and vegetable.
