摘要
目的自开展监测工作以来,我市食品中真菌毒素污染水平调查与结果分析。方法按照国家食品安全风险监测方案的采样要求和检测检验方法要求,在全市范围内采集6大类193份食品样品。检测真菌毒素指标14个。检测结果按照GB2761-2011《食品安全国家标准食品中真菌毒素限量》进行评价,国家未作限量要求的指标除外。结果我市部分市售粮食及制品被真菌毒素污染的现状较为普遍。小麦粉及制品中检出率较高的真菌毒素是DON、交链孢霉毒素和伏马毒素。玉米面(糁)中检出率较高的是伏马毒素、黄曲霉毒素和玉米赤霉烯酮。茶叶和乳品中黄曲霉毒素的污染风险较大。结论只有依托各级食品安全风险监测体系,进一步扩大食品种类和监测项目,在大数据的基础上完善和修订国家标准,才能最大程度降低食品真菌毒素污染。
Objective Having carried out monitoring, the mycotoxins levels in the foods are investigated and analyzed in the city. Methods According to sampling and testing requirements of National food safety risk monitoring plan, 6 major categories of 193 samples are collected. 14 mycotoxin indicators are detected. The results are evaluated in accordance with GB2761-2011 ,unless it is not set limit to the indicators. Results The situation is greatly common that mycotoxins contaminate commercial food and products partly in the city. DON, crossing-linking spore mildew toxins and fumonisins are the most popular mycotoxin in wheat flour and products. Fumonisins, Aflatoxin and zearalenone are the most popular mycotoxin in corn grits. The risk of aflatoxin contamination in tea and dairy products is high. Conclusion To minimize the contamination of mycotoxins in foods, it is necessary to rely on the food safety risk monitoring systems, further expand the types of food and monitoring projects, improve and revise of national standards on the basis of large data.
