摘要
南京鸭肴文化可追溯到春秋末年,它根植于"长江下游饮食圈",负载了该区域独特的历史传统、审美意趣、民俗信仰、价值观等非物质文化,成为南京城市文化的内在基因和标志性符号,在知识传播、文化传承、人际关系等方面发挥了不可替代的作用。在非遗全球化视阈下,应充分发掘南京鸭肴文化的传统价值和社会功能,构建"完整的""活态的"兼具"创新性"的现代鸭肴文化体系,使之成为推动文化产业发展、城市软实力提升以及和谐社会建设的动力之源。
Nanjing duck cuisine culture can be traced back to the late Spring in the "diet circle of the lower Yangtze river regio" and loads such intangible and Autumn Period. It is rooted cultures as the specific historical tradition, aesthetic taste, folk customs and beliefs, sense of worth, thus making Nanjing duck cuisine culture the internal gene and iconic symbol of the urban culture of Nanjing. In addition, it has played an irreplaceable social function in terms of knowledge communication, cultural inheritance and interpersonal relationship. Giv- en the globalization of intangible cultural heritage, efforts should be made to explore thoroughly the traditional value and social function of Nanjing duck cuisine culture so as to construct a"癫 ynamic" modem system of this culture which entails both authenticity and innovativeness, thus rendering it the driving force for the devel- opment of cultural industry, the enhancement of city soft power and the construction of harmonious society.
