摘要
从历史学的研究视角来看,中国的奶食文化有着悠久的历史,在很多文献中均有中国奶食文化的记载。从人类学的研究视角来看,中国的奶食文化十分丰富,它是中国人基于生态地理的选择,一方面成为某些族群饮食的标志之一,另一方面是中国某些地区基于区域生态的饮食生产和消费;同时,中国的奶食文化还深受中国传统食疗观念、西方营养观和烹饪文化所带来的双重影响。
Through the perspective of historical research, Chinese dairy culture has a long history, and there are many records of Chinese dairy culture in literatures. From the perspective of anthropology, dairy has be- come a symbol of certain ethnic food, and it is the basis of regional ecological diet production and consumption in some areas. At the same time, Chinese dairy culture has been influenced by Chinese traditional dietetic therapy and western nutrition view and cooking culture.
