摘要
目前,培养适应行业需求的国际化高素质烹饪人才已经成为全国开设有烹饪相关专业学校的重要课题。文章分析了国际化烹饪人才和高端技能烹饪人才的内涵及需求,梳理了国际化高端技能型烹饪人才培养现状,并总结了以四川旅游学院为例的国际化高端技能型烹饪人才培养改革实践,提炼和展现了人才培养新模式的核心理念,以期对同类院校的国际化人才培养提供可行的参考。
At present, it has become an important subject in culinary schools in our country to train international high - skilled culinary talents to meet the needs of the industry. This paper analyzes the connotation and demands for interna- tional culinary talents and high - skilled culinary talents, teases out the current situation of the training of internationalized high - skilled culinary talents, summarizes the reform and practice of the training of internationalized high - skilled culi- nary talents in Siehuan Tourism University, and refines and shows the core idea of the new talent training mode in order to provide reference for the training of internationalized talents in similar colleges.
