新疆是我国畜牧业大省(区),具有发展特种乳生产的自然环境优势和畜种优势。介绍了新疆特种乳资源,特种乳的化学成分、理化指标、营养特点和保健作用,特种乳加工企业分布及主要产品,特种乳和乳制品食品安全地方标准的制定,展望了特种乳产业的发展前景。

Xinjiang is one big province of animal husbandry districts in our country,which has advantages of the nature environment and breeds for the development of the special type milk industry. This study introduced the resource of the special type milk in Xinjiang,the chemical compositions,the physical-chemical indexes,the nutrition characteristics and the health function of the special type milk. The distribution and products of the enterprises in Xinjiang,the studies on the local food safety standards of special type milk and special type milk powder,and the development prospect of the special type milk industry were also introduced.
