摘要 采用化学修饰法将碱提酸沉法分离获得的糯米蛋白制备成硒化糯米蛋白(Se-GP)并鉴定其抗氧化活性。研究表明制备的多种Se-GP均具有一定的谷胱甘肽过氧化物酶(GPX)活力,其中Se-GP14的GPX活力最高,约为51.49 U/g。各种Se-GP均可发挥清除1,1-二苯基-2-三硝基苯肼自由基(DPPH·)、羟自由基(OH·)和超氧阴离子(O_2^-)自由基的作用,并可有效维持抗坏血酸/二价铁离子(Vc/Fe^(2+))诱导损伤的牛心肌线粒体的形态和正常功能,抑制损伤线粒体的膨胀,降低线粒体中脂质过氧化产物丙二醛(MDA)的产生。 Selenide glutinous proteins (Se-GP) were prepared via glutinous proteins obtained by through alkali extraction and acid precipitation were chemically modified, then their antioxidant activities were appraised. The results of the study showed that Se-GP had certain antioxidant activity of glutathione peroxidase (GPX), therein to, GPX activity of Se-GP14 was highest, circa 51.49 U/g.Various Se-GPs could play a scavenging role on 1, 1-diphenyl-2-three nitrophenylhydrazine free radical (DPPH·) , hydroxyl radical free radical (OH·) and superoxide anion free radical(O2^- ) andefficiently maintain morphology and normal function of cardiac mitochondria in bovine to avoid swelling from induced damage of mitochondria by ascorbic acid/ divalent irons (Vc/Fe^2+) and decrease the content of the lipid oxidation product malondialdehyde (MDA).
