在生猪宰后检疫中,准确迅速地鉴别出色泽异常肉,是肉品卫生质量监督检验的一项重要工作。阐述几种异常肉的概念,分析了这5种肉的发病原因,病理变化及宰后处理,对检疫人员来说是非常重要的。现就色泽异常肉的鉴别和处理进行阐述,以供大家参考。
It is important for the supervision and inspection of accurately and rapidly identify abnormal meats in the quaran tine of pig post slaughter.
