固定化酶TLIM催化制备富含甘油二酯的大豆油

摘要 以固定化脂肪酶TL IM为催化剂,采用甘油解法在无溶剂体系中制备富含甘油二酯的大豆油。利用气质联用检测甘油二酯含量。考察底物摩尔比、反应温度、反应时间和加酶量对甘油解反应影响,利用响应面试验设计优化各主要因子,并经回归分析获得最优的工艺条件为:加酶量2.0 g,水解温度50℃,水解时间16 h,大豆油与甘油的摩尔比为5:1。在最佳工艺条件下验证,得到大豆油中甘油二酯含量为17.04%。所得回归模型拟合情况良好,达到设计要求。 Glycerol diester-enriched soybean oil was prepared by immobilized lipase TL IM as a catalyst in a solvent-free system using glycerolysis. The content of diacylglycerol was detected by GC/MS. The main factors were optimized by response surface design. The optimal conditions were as follows emzyme amount 20.0 g, hydrolysis temperature 50 ℃, hydrolysis time 16 h, soybean oil and glycerol molar ratio of 5:1. Under the optimum conditions, the content of diglyceride in soybean oil was 17.04%. The obtained regression models could fit well and meet the design requirements.
