摘要
核桃内种皮中含有丰富的对人体有益的多酚物质,但在核桃食品加工过程中往往被当作废弃物来处理,造成资源的巨大浪费,因此开发利用核桃内种皮多酚物质具有重要的现实意义。针对核桃内种皮多酚生理活性的提取和分离技术进行综述,并对其应用前景进行了展望。
Walnut kernel pellicle is rich in polyphenols which have favorable effects on human health. However, it is discarded during the processing of walnut food, resulting in a great waste of resources. So the application of polyphenols in the walnut kernel pellicle is important. In this paper, the biological activity, extraction and purification of polyphenols in the walnut ker- nel〉pellicle〉are〉introduced〉and〉the〉application〉prospect〉is〉also〉discussed.
