林业高等院校特色课程——“林产食品加工工艺学”教学改革探讨

摘要 "林产食品加工工艺学"是林业高等院校食品、生物等相关专业的一门专业核心课,针对该课程教学中存在的问题,提出几点建议和改进措施:引导学生主动学习"林产食品加工工艺学",根据社会发展和市场需求调整教学内容,以果蔬、食用菌加工为重点,增加功能性、特色性林产食品加工的内容;引进林产食品加工的高新技术,通过多种授课方式提高教学效果,增加综合性实验、探究性实验,以激发学生的实验实践潜能;丰富学生的课堂、课外活动,构建第二课堂,培养学生的创新创造能力。可为农林类高等院校的"林产食品加工工艺学"等相关课程教学改革提供一定借鉴,培养新一代的农林创新型人才。 Forest Food Processing Technology is a professional core course of students major in food and biology in forestry col-leges. This article makes some suggestions and improvement ways for the problems during the course teaching. Firstly, guide the students to study Forest Food Processing Technology by themselves. Secondly, adjust the teaching content according to so-cial development and market demand, with an emphasis on processing of fruits, vegetables and edible fungus, increase the proportions of functional forest foods and fancy forest foods processing. Thiraly, study the advanced technologies of forest food processing, and enhance the teaching effect by multiple lecture models, inspire potentia of experiment and practice of students by increasing comprehensive experiments and inquiry experiments. Finaly, enrich the classroom activities and extracurricular activities of students, build second classroom and foster the students' innovative and creative abilities. This article can lend some insight into related courses such as Forest Food Processing Technology of agriculture and forestry colleges, then develops a*new generation innovative individuals of agriculture and forestry colleges.
