摘要
黄曲霉毒素(AFT)是主要由黄曲霉和寄生曲霉产生的次生代谢产物,在湿热地区食品尤其是花生、玉米、稻米、大豆、小麦等粮油产品中,AFT检出率较高,是霉菌毒素中毒性最大、对人类健康危害极为突出的一类霉菌毒素。检测粮食、大豆等食品中黄曲霉毒素的方法很多,本文着重概述国内外黄曲霉毒素的检测技术,尤其是基于免疫学原理的各种检测技术和方法,并对比分析各方法的优缺点,为选择合适的检测方法提供依据。
Aflatoxins(AFT),a kind of compounds with similar structure of dihydrogen furan coumarin,are derivatives and secondary metabolites produced mainly by Aspergillus flavus and parasitic Aspergillus. The positive rate of AFT is high in the foodstuff of hot and humid areas especially in peanuts,corn,rice,soybeans,wheat and other grain and oil products.AFT is the highest toxicity in mycotoxins and is harmful to human health. There are many methods to detect AFT in grain,soybean and other food;here,we provide an overview of AFT′s detecting technologies,especially various technologies and methods based on immune principles. And compare the advantages and disadvantages of these methods in order to provide basic information for choosing appropriate detecting method.
