摘要
以红米为原料,采用醇提法从红米中提取色素,并对其进行体外抗氧化活性的研究。实验结果表明:色素对超氧自由基的最高清除率达81.13%;·OH自由基的清除率达到71.43%;对DPPH自由基的清除率达到93.40%。其红米色素具有良好的抗氧化能力,具有好的开发前景。
The red rice was raw material,The pigment was extracted from red rice by alcohol extraction.In vitro antioxidant systems,The antioxidant activity of extract on red rice pigment are discussed.The results showed that：The scavenging rate of superoxide radical was 81.13%,DPPH was 93.40%,hydroxyl radical was 71.43%.in a word,Red rice pigment has a certain antioxidant capacities and a bright future.
