荸荠皮多糖对自由基的清除作用 被引量:5

摘要 利用荸荠皮多糖为原料,分别对其对羟基自由基和超氧自由基的清除能力进行测定,并利用单因素试验和正交试验考察多糖质量浓度、温度和时间等因素对清除率的影响。结果表明,荸荠皮多糖清除羟基自由基的最佳条件为多糖质量浓度1.2 mg/m L、温度30℃、时间70 min,在此条件下对羟基自由基的清除率可达90.71%;荸荠皮多糖清除超氧自由基的最佳条件为多糖质量浓度1.2 mg/m L、温度25℃、时间10 min,在此条件下对超氧自由基的清除率可达56.64%。因此荸荠皮多糖对羟基自由基清除能力较强,对超氧自由基具有一定的清除能力。该研究为荸荠皮多糖的进一步开发利用提供理论基础和一定的参考价值。 With polysaccharide in Eleocharis tuberosa peel as raw materials, clearing ability of the polysaccha- ride for hydroxyl radicals and superoxide radicals, was determined, and influence of mass concentration of polysaccharide, temperature, and time, on clearing rate, were studied by single-factor experiments and orthogonal tests. The result showed that, the optimal conditions in which hydroxyl radicals were cleared by polysaccha ride in Eleocharis tuberosa peel, were mass concentration of polysaccharide of 1.2 mg/mL, temperature of 30 ~C, and time of 70 rain, and under the optimal conditions, the clearing rate for hydroxyl radical could reach 90.71%. The optimal conditions in which superoxide radicals were cleared by polysaccharide in Eleocharis tuberosa peel, were mass concentration of polysaccharide of 1.2 mg/mL, temperature of 25 ~C, and time of 10 min, and under the optimal conditions, the clearing rate for superoxide radicals could reach 56.64 %. So, polysaccharide in Eleocharis tuberosa peel had stronger clearing ability to hydroxyl radical, and certain clearing ability to superoxide radical. Theoretical basis and reference value were provided for further exploitation of polysaccharide in Eleocharis tuberosa peel by the reaseach.
