响应面优化虾夷扇贝抗氧化肽酶解液工艺研究 被引量:8

摘要 为制备富含抗氧化肽的扇贝酶解液,以虾夷扇贝为原料,以水解度和DPPH自由基清除率为指标,应用响应面法优化扇贝蛋白的生物酶解工艺,并测定了富含活性肽酶解液的体外抗氧化性。结果表明:扇贝蛋白生物酶解适宜工艺参数为蛋白酶用量3.1%,酶作用温度45℃,作用时间4.5 h,此工艺参数下酶解液DPPH自由基清除率为82.06%,总抗氧化能力为0.11 U/mg prot,抗超氧阴离子活力为0.37 U/g prot,羟自由基清除率为55.31%。 In order to get antioxidant peptide,the response surface experiment on enzymatic hydrolysis conditions was optimized and the in vitro antioxidant activity of the active peptide hydrolyzate was determined with the Patinopecten yessoensis as raw material and the degree of hydrolysis and DPPH radical scavenging rate as the indexs.The results showed that the appropriate amount of enzyme was 3. i %, hydrolysis temperature was 45℃, enzymolysis time was 4.5 h. The DPPH radical scavenging rate was 82.06 % under the process parameters. And the total antioxidant capacity of the enzymatic hydrolysateof Patinopecten yessoensis was 0.11 U/mg prot, the anti superoxide anion activity was 0.37 U/g prot, the scavenging rate of hydroxyl radical was 55.31%.
