摘要
坚果收获后初加工中的干燥是影响坚果加工企业效益的主要因素。为解决坚果干燥难的问题,提出了一套坚果干燥工艺,从坚果干燥方法及理论的国内外发展现状和干燥技术在坚果行业的应用现状两个方面进行了探讨,综合对比了国内外研究学者的研究方法和成果,为坚果干燥工艺的研究和发展提供理论参考。
The drying of nuts in the preliminary processing of nuts after harvesting is a main factor influencing the benefits of nut processing enterprises. In order to solve the difficulty in drying nuts,discussion is conducted in terms of the domestic and foreign research status of nut drying methods and theoretical innovation and the research status of drying technology in the nut industry,with the research methods and results of domestic and foreign researchers comprehensively compared,providing theoretical reference for the research and development of nut drying process.
