摘要
随着我国食品加工业的不断发展,酶制剂在果蔬加工行业的应用日益广泛,相关研究也逐步深入。主要介绍酶制剂的种类及其在果蔬食品加工中的作用,探讨今后酶制剂研究和应用的方向。
With the development of the food processing industry in domestic,the applications of enzymes are widely and deeply,especially in fruit and vegetables processing field. This article simply introduced several kinds of enzymes and their functions in fruit and vegetable food processing,with a view to providing guidance for the future research and application of enzyme.
