摘要
在对素食进行界定的基础上,从宗教信仰与伦理、健康需求、饮食简美需求、低碳环保需求等方面对素食兴起的原因进行分析,并从宗教素食、养生素食、宫廷素食、生态素食等方面对素食餐饮的发展现状和前景进行综述,旨在为现代素食餐饮经营提供理论依据。
Based on the definition and scope of a vegetarian diet,this paper analyzed the reasons for the rise ofvegetarians from different aspects of religious beliefs and ethics,health diet,demands of simple beauty,and environmental protection needs. To provide the theoretical advice for vegetarian catering business,also reviewed the present situation and development prospect of vegetarian catering from court aspects of religiousvegetarianism,healtli vegetarians,palace vegetarianism and ecological vegetarian.
