摘要
以晋中南地区梅鹿辄葡萄为试材,探究延迟采收对葡萄酒基本理化指标、酚类物质、花色苷组分和非花色苷酚类物质的影响,以期为改善当地梅鹿辄葡萄酒品质提供理论依据。结果表明,延迟14 d后采收,梅鹿辄葡萄酒中的总花色素、总酚和各花色苷组分含量均有显著提高(P<0.05);延迟7 d后采收,可显著提高葡萄酒中的黄烷醇含量(P<0.05);但延迟采收对葡萄酒中的单宁含量有较显著的降低作用(P<0.05)。因此,延迟14 d采收有利于提高葡萄酒酚类物质的含量,改善葡萄酒的质量。
Using the Merlot grape from the central and southern Shaanxi province as experimental material, the effect of delayed harvesting on the basic physical and chemical indexes, phenols, anthocyanin and non-anthocyanin was researched to provide theoretical basis for improving the quality of local Merlot wine. The results showed that after delayed harvesting for 14 d, the contents of total anthocyanidin, total phenols and anthocyanins in Merlot wine were significantly improved (P〈0.05). After delayed harvesting for 7 d, the flavonol content of in wine was significantly improved (P〈0.05). But delayed harvesting had significant reduction effect on tannin content in the wine (P〈0.05). Therefore, delayed harvesting of 14 d was beneficial to increase the phenols content in the wine and improve the quality of wine.
