半干型绍兴黄酒中主要高级醇含量检测及其香气贡献分析 被引量:12

摘要 黄酒是我国特有的发酵酒。在种类繁多,风格各异的黄酒中,半干型绍兴黄酒是我国传统黄酒的主要代表之一。其口感柔和、鲜爽,高级醇是其主要风味物质。该研究通过顶空固相微萃取与气质联用的方法检测了半干型绍兴黄酒中关键高级醇的种类及含量,并对其风味贡献进行了分析。结果表明,半干型绍兴黄酒中主要的高级醇主要是异丁醇、异戊醇和β-苯乙醇,其对黄酒风味贡献的顺序为:β-苯乙醇>异戊醇>异丁醇,样品加标回收率在97.05%~101.37%,相关系数R>0.96,相对标准偏差(RSD)为2.16%~5.91%。该结果对科学评价黄酒风味有一定指导意义。 Chinese rice wine is a traditional fermented alcoholic drink in China. In great variety and different styles of Chinese rice wine, semi-dry Shaoxing rice wine is one of the major representative Chinese rice wine types. It has gentle flavor, fresh and clear taste, and higher alcohols are important flavor compounds. The key higher alcohol variety and contents of Shaoxing rice wine were determined by solid phase microextracfion com- bined with GC-MS, and the aroma contribution was analyzed. Results showed that the main higher alcohols of semi-dry Chinese rice wine from Shaoxing was isobutyl alcohol, isoamyl alcohol, and β-phenylethyl alcohol, the aroma activity contribution to the rice wine was β-phenylethyl alcohol〉isoamyl alcohol〉isobutyl alcohol. The results of recovery test was 97.05%-101.37%, R〉0.96, RSD was 2.16%-5.91%. All these might be benefit to the flavor evaluation of Chinese rice wine.
