摘要
饼坯上麻是饼类食品加工过程中的关键工序,饼坯的上麻效果直接影响饼类食品的入口口感和外观形象。现阶段由于上麻效率、上麻效果和芝麻回收率等方面的问题,上麻工序仍长期依靠人工完成,无法实现自动化上麻。针对上麻机存在的上述三方面问题,基于振动上麻的概念设计一款自动上麻机,并通过气压推动和真空反吸回收剩余芝麻,提高芝麻利用率。自动上麻机由芝麻循环系统、错层上麻轨道和偏心振动机构等组成。同时,通过单变量变化试验,研究芝麻料斗开口尺寸、电机频率对饼坯上麻效果的影响。试验结果表明,芝麻料斗开口尺寸对上麻效果呈现出饱和特性,电机频率对上麻效果呈现出近似正态分布特性。
Sprinkling sesame on cake pie is the key process in the food processing, and influences taste and appearance of cake tbods directly. Nowadays this operations always relies on manual job, not automation because of the efficiency, effect, recovery and some other problems of sesame sprinkling. Aiming at the above problems, automatic sesame sprinkling machine is designed based on eccentric vibration and remaining sesame is recycled through pressure- driven and vacuunl sucking in m'der to improve utilization ratio of sesame. Automatic sesame sprinkling machine is nmde up of sesame eireulatoD" system, double sesame sprinkling tracks and eccentric oscillating mechanism. Effect of sesame hopper opening size and motor frequeney to sprinkling effieieney was researched lay single variable test . The experiments suggest that saturation characteristics were showed between sesame hopper opening size and sesame sprinkling effect, while normal distribution characteristics were showed between motor frequency and sesame sprinkling effect.
