摘要
南宁老友粉是广西的特色小吃,拥有近百年的发展历史。老友粉的原料搭配合理,选料科学,兼顾营养和美味,具有开胃驱寒的保健功能。通过对老友粉的历史、辅料搭配、制作工艺等方面进行科学评价与文化解读,可挖掘其文化内涵,提出老友粉的发展策略,推动南宁传统美食老友粉的发展。
Laoyou noodle in Nanning, is a special snack in Guangxi, with nearly a hundred -year development history, reasonable collocation of ingredients, scientific selection of materials, emphasis on both nutrition and tastes and healthcare function of stimulating appetites and dispelling coldness. The article conducts scientific evaluations, cultural interpretation and excavation of the cultural contents of Laoyou noodle in terms of its history, ingredients collocation and production technology, and presents strategies for development of Laoyou noodle, a traditional food in Nanning.
