摘要
芡实是一种具有特殊保健功效的药食两用物质,又是滁州特色农产品之一。本实验是以芡实、银耳、糯米为主料,并辅以红豆、花生、薏仁、芸豆、莲子加工形成营养保健的八宝粥。从而创新芡实产品种类,对地方经济快速发展起到促进作用。本实验以原料的生料比、水料比以及加糖量进行单因素和正交实验,探索最佳的芡实保健八宝粥配方。实验结果表明:芡实米20.0g、糯米50.0g、红豆10.0g、花生10.0g、薏仁10.0g、芸豆10.0g、莲子10.0g、银耳(泡发后)20.0g,生料总计140.0g;加水735 g,加糖量按照料水总量的6.5%添加,得出的八宝粥状态稳定、口感好。
Semen Euryale is a medicinal and edible substance with special health benefits and it is one of Chuzhou characteristic agricultural products.This experiment was based on the main material of Semen Euryale,tremella,glutinous rice to form Eight-treasure porridge,which was processed by red bean,peanut,semen coicis,kidney bean and lotus seed as accessories.Therefore,we can innovate the product category of Semen Euryale and promote the rapid development of local economy.The experiment was based on the raw material ratio,the ratio of water and the amount of sugar to design experiment of single factor and orthogonal experiment,in order to search the best sanitarian Eight-treasure porridge formula.The experimental results show that:Semen Euryale seed 20.0 g and glutinous rice50.0 g,10.0 g red beans,10.0 g peanuts,and10.0 g semen coicis,10.0 g kidney bean,10.0 g lotus seed,and 20.0 g tremella(soaked after).The total of raw materials is 140.0 g;added water 735 g,added sugar amount according to the total water amount of 6.5%.The obtained Eighttreasure porridge is stable and tastes best.
