摘要
食品微生物检验是食品卫生安全质量控制的焦点之一,对预防由微生物引起的食源性食物中毒问题有重要的意义。实验室做好质量控制对提高检验结果的正确性尤为重要。本文通过从室内质量控制(人员、设备、耗材、环境、环节、报告)到室间质量控制(能力验证、室间比对)进行分析总结,指出微生物实验室质量控制中的重要因素和关键环节。旨在通过严格进行的质量控制、运行良好的质控系统使微生物检验工作更加规范、标准,确保数据的准确性、客观性及可重复性,进一步提高质量检测的技术水平,降低食品安全风险。
Food microbiological examination is one of the focuses of food hygiene, safety and quality control. It is of great significance to prevent food poisoning caused by microorganisms. Laboratory quality control is very important for improving the accuracy of inspection results. This paper from the indoor quality control (personnel, equipment, material, environment, links, report) to the external quality control (the ability to verify, chamber alignment) were analyzed, and pointed out the important factors of quality control and the key link in microbiology laboratory. Through strict quality control, good operation quality control system makes the microbiological examination work more standardized, to ensure data accuracy, objectivity and repeatability, further improve the technical level of quality inspection, reducing food safety risks.
