摘要 乳制品的生产质量对人民群众的生活质量和身体健康有十分重要的影响,乳制品的质量和安全是全民关注的一个话题,所以必须要针对乳制品的生产和加工工作进行安全控制和合理把控。乳制品生产工作和质量控制涉及多个环节,只有将乳制品生产的多个环节都兼顾到才有助于确保其食品安全和质量。本文针对影响乳品加工过程中食品安全及质量的原料乳加工与处理、生产过程监督和检查、设备的运行情况和设备的清洗与消毒、产品的运输与流通以及员工的质量意识培养与质量知识的普及等因素进行分析,并提出注重对原料乳生产与验收过程的质量控制和对加工工艺的质量控制,以及生产设备的清洗控制,包装方法和包装材料的质量控制,存储和运输过程的质量控制等建议策略,希望对乳制品质量安全有所帮助。 The quality of dairy products has a very important impact on the quality of life and health of the people, and the quality and safety of dairy products are a topic of concern to all the people. Therefore, it is necessary to be aimed at safety control and reasonable control over the production and processing of dairy products. The production and quality control of dairy products involve many links. It is helpful to ensure safety and quality of dairy products only when they are taken into account in many aspects. This article is aimed at the processing of raw milk, the supervision and inspection of the production process, the operation of the equipment and the cleaning and disinfection of the equipment, the transportation and circulation of the products and the quality training and quality of the employees knowledge of the popularization and other factors to analyzed, which affects the safety and quality of food during the dairy processing. And put forward the focus on the quality control of processing and acceptance process raw milk, processing technology, cleaning control of production equipment, packaging methods, packaging materials, storage, transportation process, and other recommended strategies, hoping to inspire the quality and safety of dairy products.
