摘要
食品安全直接关系人们的身体健康,食品重金属污染也是食品安全中迫切需要解决的问题。本文首先分析食品重金属的来源及其危害,并重点就当前应用较为广泛的4种食品重金属检测方法原理及其现实应用进行探讨,并对各种方法的应用领域、优点和不足进行对比,最后对食品重金属检测方法的发展进行展望,以更好地做好食品安全检测工作,为人类健康筑起一道安全屏障。
Food safety is directly related to people＇s health, food heavy metal pollution is also an urgent problem in food safety. In this paper, the source and harm of heavy metals in food were analyzed, and the principle and practical application of four kinds of food heavy metal detection methods were discussed. The application fields, advantages and disadvantages of each method are compared. finally, the development of food heavy metal detection methods were carried out in order to better do a good job of food safety testing work for human health to build a security barrier.
