龙胆多糖饮品的研制

摘要 以龙胆多糖为原料,以白砂糖、苹果酸、稳定剂、龙胆多糖为因素,龙胆多糖饮料感官评分为指标,进行单因素试验和正交试验,探讨龙胆多糖饮品的最佳配方。结果表明,龙胆多糖饮品最佳配方为白砂糖添加量12%,糖酸比pH值2.9,稳定剂添加量0.1‰,龙胆多糖添加量0.5%。在此配方下制作出的龙胆多糖饮品感官评分为95分,而且口感爽滑、酸甜可口、美味健康。 Gentian exhibited many effects such as liver protection and cholagogue,strengthen stomach,lowering blood pressure,anti-inflammatory,anti allergic,anti pathogen. It can enhance immune function and has influence on the function of central nervous system and other pharmacological effects. Gentian polysaccharide was one of the effective components of gentianaceae plants. Gentian polysaccharide was used as raw material in this paper,with sugar,malic acid,stabilizer,gentian polysaccharide as factors. Single factor and orthogonal test were used to study the best formula of gentian polysaccharide beverage. Various factors' influence on the sensory quality of gentian polysaccharide beverage were studied. The results showed that the optimum formula of gentian polysaccharide beverage for sugar 12%,sugar-acid ratio pH 2.9,stabilizer 0.1‰,gentian polysaccharide 0.5%. The sensory evaluation score of gentian polysaccharide beverage which has been produced by the best formula was 95 points. Produced under these conditions,gentian polysaccharide beverage tastes smooth,sweet,delicious and healthy.
