摘要
两段式冷却技术已经广泛应用于生猪的屠宰加工,在降低干耗、抑制细菌繁殖和提高肉品品质方面取得了良好的效果。尽管国内外学者对该冷却技术在肉牛屠宰加工中的应用进行了大量研究,但受到牛肉在低温下易产生冷收缩等因素的影响还未能得到广泛应用,通过设置-4℃的快冷温度和对冷间内冷风机的合理布置为该技术在肉牛屠宰中的应用做了进一步探索。
Two-stage cooling technology has been widely used in pig slaughter and processing,which could reduce the consumption of dry,inhibit the reproduction of bacterial and improve the quality of meat. The domestic and international scholar have made a lot of research about application of the cooling technology in the beef slaughter and processing. This technology haven't been widely used,because of cold shortening and other factors. Through setting the temperature of quick chilling at -4 ℃ and the rational arrangement of ceiling cooler, the author made a further exploration about the the application of two-stage cooling technology in the beef slaughter and processing.
