摘要
为保障稻谷储藏安全,减少稻谷后期加工成本,拟采用脉冲强光对稻谷进行处理,研究了脉冲时间和脉冲距离对稻谷的灭霉效果,以及对稻谷水分、温度和出糙率、整精米率及色度的影响。结果表明:脉冲时间、脉冲距离对稻谷灭霉率影响显著(P<0.05)。在脉冲频率3 Hz,脉冲距离8 cm,脉冲时间5 min条件下,灭霉率≥99%。稻谷经脉冲强光处理后含水量略有下降,出糙率及整精米率提高(P>0.05),稻谷和精米的黄度指数随脉冲时间的延长而降低,结果说明,脉冲强光可实现对稻谷的储藏和加工处理。
To ensure the safety of grain storage and reduce the cost of rice processing, the rough rice with high moisture content was treated by pulsed light for disinfection. The disinfection efficiency of different treatment (resident times and distances) and the changes in total number of mold, moisture, temperature and head rice yield of treated rough rice were investigated in this paper. According to the results, the resident time and pulse distance showed significant effects on disinfection for rough rice (P 〈 0.05 ). After 5 rain and 3 Hz of pulsed light treatment at 8 cm of distance, the disinfection rate could achieve 99.9%. In addition, pulsed light showed no negative effects on head rice yield. Additionally, the yellowness index of grain and milling rice decreased with the increase of pulsed light processing time. Therefore, the pulsed light technology could be used as an effective disinfection method for freshly harvested rough rice.
