摘要
对超高压技术在食品生产中的应用研究进展进行了阐述,分析了超高压技术在食品生产中存在的问题并提出了应对措施,对瞬变高压技术前景进行了展望。
Research progress of application of ultra-high pressure technology in food production was expounded and the problems and the countermeasures of ultra-high pressure technology in food production were analyzed and put forward.The prospects of instantaneous high-pressure technology was forecast.
